Tropical Banana Pancakes with Scrambled Eggs and Bacon....makes 4 pancakes
1/2 cup flour
1 tablespoon brown sugar
1 teaspoon baking powder
2 teaspoons rum extract
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
pinch of salt
1 tablespoon vegetable oil
1//2 cup milk
1 egg, beaten
2 mashed ripe bananas
1/3 cup flaked coconut
Mix all ingredients together. Using about 1/3 cup of batter per pancake.......

Don't walk away, these will turn dark really quick...patience is the key...medium heat! Use about a teaspoon of oil....

When the middle starts to bubble like this....

And the edges get dry, like this....

Then it's time to flip it over.

In the meantime, get good applewood smoked, center-cut bacon, if possible and put cold bacon into a cold skillet, set the heat to medium and let them do what bacon does best...get crisp!

As for the scrambled eggs....for two people, I used 5 eggs...I know it sounds like a lot, but we don't eat many of them, so every once in a while, I think eggs are fine! So, 5 eggs, 3 tablespoons of heavy cream, 2 dashes of Frank's Red Hot sauce, and coarse ground black pepper to taste...over medium-low heat, melt 1 teaspoon of butter with 1 teaspoon of vegetable oil and add egg mixture...keep scraping up from the bottom of the pan...I really like to use my silicon spatulas for things like this....

And I promise you fluffy, tasty eggs!

Beautiful, steaming hot pancakes...I used honey instead of syrup...
And dinner was served!
